Château Vieux Moulin - Vox Dei 2020
In Montbrun des Corbiéres lies the certified organic vineyards of Château Vieux Moulin, run by Alexandre They and his wife Laurence. Alexandre is the seventh generation of his family to lead the estate, which is over 200 years old, having taken over from his father in 1998. Their wines are made under the Corbiéres appellation in Languedoc. Alexandre and Laurence farm their 28 hectares organically, preserving the biodiversity and respecting the cycles and systems of nature. All their wines are fermented with native yeasts and minimal intervention.
The Vox Dei is a blend of 35% Syrah, 35% Mourvèdre, 10% Grenache and 10% Carignan from vines that average 45 years of age grown in clay-limestone soils with schist. The grapes are destemmed and whole-berry fermented in cement vats, then aged for 1 year in barrel. The wine shows great concentration of dark fruits, spice and herbal flavors with wonderful depth, yet is buoyed by a surprising freshness. Enjoy with barbecued chicken or pulled pork.
