Domaine Bony Gachot is small, family domaine in Nuits-Saint-Georges run by Fabienne Bony. In the 1960's, Jean-Pierre Bony founded the estate along with his wife, and in 2000, their daughter, Fabienne, tool control. Since she's taken over, Fabienne and her husband have increased the domaine's vineyard holdings to 6 hectares, while also negotiating contracts with growers throughout the Côtes de Nuits. In the vineyards Fabienne practices lutte raisonnée – adapting their vine treatments according to the true threat of disease, using products which respect the environment as much as possible, and only using chemical products if no other solution can be found. Traditional winemaking practices in the cellar result in wines of purity, expression and class.
The Bony Gachot Les Pruliers pours a brilliant ruby red, presenting mouthwatering aromas of red berry and stone fruits accented with notes of dried purple flowers. The palate is soft and velvety with concentrated flavors of wild strawberry, raspberry and black cherry complemented with a touch of spice. These dense fruits intertwine with delicate acidity and a light, earthy minerality. This Premier Cru is bolstered by super-fine tannins all the way towards its long, luscious finish. Enjoy with pan-seared veal medallions with porcini mushrooms or crispy duck breasts with a cherry glaze.
