Primitivo Collantes’ winery is located in the town of Chiclana de la Frontera on the Atlantic coasts of Cadiz, an area prized for its Albariza soils. The white chalky soil dries without caking and has high-moisture retention. Primitivo, fourth-generation winemaker, is known in the sherry world for crafting intriguing wines and is at the forefront of the Vino de Pasto movement. The movement embraces “natural” sherry: small-scale production, increased quality and sharing all the same winemaking traditions of classic sherry except for not being fortified. The sherries are fresher and brighter in the glass and can be enjoyed more frequently and with a broader range of pairings. Primitivo only uses his estate-grown fruit which is farmed organically (certified) on his nearly 37 hectares.

The Collantes Fossi Amontillado — aged under flor for five years, then another eight years oxidatively — pours a light amber color offering notes of roasted nuts, butterscotch and toast. The palate is light- to medium-bodied with notes of dried apricot and yellow plum highlighted with a vibrant acidity. The finish is rich and displays hints of salted hazelnuts and orange peel. Excellent pairing for a cheese plate with assorted pickled vegetables.
