Collantes Arroyuelo - Fino
Primitivo Collantes’ winery is located in the town of Chiclana de la Frontera on the Atlantic coasts of Cadiz, an area prized for its Albariza soils. The white chalky soil dries without caking and has high-moisture retention. Primitivo, fourth-generation winemaker, is known in the sherry world for crafting intriguing wines and is at the forefront of the Vino de Pasto movement. The movement embraces “natural” sherry: small-scale production, increased quality and sharing all the same winemaking traditions of classic sherry except for not being fortified. The sherries are fresher and brighter in the glass and can be enjoyed more frequently and with a broader range of pairings. Primitivo only uses his estate-grown fruit which is farmed organically (certified) on his nearly 37 hectares.
The Collantes Arroyuelo Fino —aged under flor for five years — pours a pale straw color with an intense nose of toasted sourdough and almonds. The medium-bodied palate is dry offering delicate flavors and a bright acidity. The finish is soft and saline-laced. Enjoy with lighter fare: soups or salads, seafood or cured meats and cheeses.
