Domaine Petitot is the work of husband and wife team Natalie and Hervé Petitot. Hervé manages the vineyards and Natalie the cellar, although both are trained oenologists. The Petitot family had been farmers in Burgundy for five generations, however they used to specialized in grains. It was Hervé's parents who bottled the first estate wine in 1975, with Hervé taking over from his father in 1994. Today the estate consists of only 8 hectares of tiny parcels spread across the Côtes de Beaune and Côtes de Nuits. In the vineyard, the Petitots practice organic farming: they plow frequently in order to eliminate the use of herbicides and employ no insecticides of any kind. Hervé and Natalie believe that a wine is a photograph of the vintage, so all their work is to allow the terroir and the quality of the vintage to come through.
Domaine Petitot's Ladoix Vieille Vigne is from a 0.65 hectare plot of 50 year-old Pinot Noir vines grown in the village's chalky-marl soils. All grapes are destemmed and fermented with indigenous yeasts in cement tanks, then matured for one year in oak barrels, 15% of which are new oak, the rest in 1-5 year old barrels, and bottled unfiltered. The result is a wine of pristine fruit quality and expression with supreme drinkability: an exquisite balance of delicacy and flavor concentration.
