Domaine de La Santoline is owned by the Greuzard family, who moved from Burgundy to the Languedoc in 1980, purchased their first vineyards in 1987 and started Domaine de La Santoline in 2001. The estate is named after the herb santolina, one of many aromatic plants that flourish among their 60+ hectares of vines located in the two communes of Mirepeïsset and Sallèles-d’Aude. The Greuzard family are independent wine growers who farm sustainably, working their vines as environmentally friendly as possible to produce healthy grapes that in turn create delicious, welcoming and amiable wines.
Domaine de la Santoline's 100% Chardonnay pours a brilliant mid-lemon color with green highlights. On the nose, aromas of baked apples, Granny Smith apples coated in cinnamon, white flowers and sea spray plume from the glass. The palate is awash with fresh orchard fruit flavors and a saline mineral note that permeates the wine, matching perfectly with the surprisingly fresh acidity. The finish is bright and delicious, calling you back to the glass for more. This is a charming Languedoc Chardonnay, excellent to drink on its own but equally enjoyable with a plate of grilled fish and zucchini.
