Philippe Millet settled in Tonnerre in the mid-60's, cultivating his land for cereals. In the early-80s, his wine estate was born when part of his estate became available for AOC Petit Chablis. After planting nine hectares to Petit Chablis, Philippe was able to acquire vines in both Chablis and Chablis Vaucoupin Premier Cru. The seasoned farmer naturally began producing exceptional grapes, eventually deciding to vinify them and market his wines. While Philippe is now retired, his son, Baudouin Millet manages the winery and continues to expand. Baudouin strives to produce wines with strong sense of place in order to showcase the purity of the Chardonnay grown on the signature Kimmeridgian soil of Chablis. Today, the estate is comprised of 16 hectares in Petit Chablis, Chablis, Vaucoupin Premier Cru, Vaudésir and Les Preuses Grand Cru and Bourgogne. Due to diligent farming and environmental commitment, the Baudouin Millet estate was certified HVE (High Environmental Value) in 2020.
Baudouin's Chablis pours a light gold accented with soft green highlights. The nose is invigoratingly fresh and lively displaying a citrus and orchard fruit medley kissed with a light, savory note. One sip rewards you with flavors of green apple, lemon and lime zest imbued with a touch of mint. Carried to its finish with an enticing marriage of chalky minerality and energetic acidity, this Chablis delivers excellent concentration of flavor and beautiful length. Oysters are an easy choice with this lovely white — any seafood really — but try it with a chicken beurre blanc over wild rice or escargots with garlic butter and herbs, a Burgundian classic!
