Domaine Courbet was founded in 1869, making it one of the oldest and most emblematic family properties in the Jura and Château Chalon. The estate is run by Damien Courbet, an oenology graduate of Dijon, who took over the domaine in 2011 after several years working side-by-side with his father, Jean-Marie. Though the 7.5 hectare estate has been farmed biodynamically since 2005, Damien has just started the conversion for organic certification. Their vineyards are planted to Trousseau, Poulsard, Pinot Noir, Savagnin and Chardonnay in clay-limestone and light marne soils. All work in the vineyards is performed manually without chemicals and fermentation uses natural yeasts with little to no sulfur added.
Courbet’s Trousseau de la Vallée displays a pale ruby color in the glass, offering high-toned aromas of red berries tinged with earth. The palate possesses ripe flavors of plum and sour cherry accented with a touch of spice. Balanced by the perfect amount of acidity and supple tannins, this Trousseau coasts to a wonderfully pure finish marked with a note of crushed stone. Enjoy with hard cheeses and paté, roasted squab or hickory-smoked pork shoulder.
