Domaine Petitot is the work of husband-and-wife team Natalie and Hervé Petitot. Hervé manages the vineyards and Natalie the cellar, although both are trained oenologists. The Petitot family had been farmers in Burgundy for 5 generations, however prior to vineyards, they specialized in grains. It was Hervé's parents who bottled the first estate wine in 1975, with Hervé taking over from his father in 1994. Today, the estate consists of only 8 hectares of tiny parcels spread across the Côtes de Beaune and Côtes de Nuits. In the vineyard the Petitots plow frequently to eliminate the use of herbicides and in addition they employ no insecticides of any kind. Hervé and Natalie believe that a wine is a photograph of the vintage, so all their work is to allow the terroir and the quality of the vintage to come through.
Les Pimentiers is a small, 0.17 hectare east facing vineyard at 230 meters elevation in Savigny-lès-Beaune. The Pinot Noir vines are 60 years-old, grown on red-brown limestone, clay and gravel soils. All the fruit is destemmed and fermented with indigenous yeasts in cement tanks, then aged for 1 year in oak barrels, 15% of which are new, the rest 1-5-year-old barrels. Bottled unfiltered. The wine pours a brilliant light ruby with a scarlet rim. On the nose, aromas of strawberry, red currant and fresh earth explode from the glass. There is excellent concentration of ripe red fruits combined with a subtle warming spice, perfectly balanced by a broad acidity and smooth tannins to complement the well-rounded body. The finish is long and complex with lovely depth of flavor. Enjoy with grilled salmon alongside roasted beets or rack of lamb with an herb crust accompanied by sautéed mushrooms.
