Julie and Xavier Gonet-Medeville both come from long lines of winemaking families; Julie’s family owns Château Gilette in Sauternes, and Xavier’s family have been farming in Champagne for generations. The Gonet-Medeville estate began in 2000, when Xavier’s family plots were being divided up, from which he received 12 hectares of Premier and Grand Cru vineyards in Bisseuil, Ambonnay, & Mesnil-sur-Oger, as well as five other villages across the region. All vineyards are farmed organically and vinified separately to ensure terroir expression. None of the wines go through malolactic conversion and all have low levels of dosage; all are fermented and/or aged in used barriques with some also seeing time in stainless steel tanks.
Gonet-Medeville's Blanc de Noirs is made from 100% Pinot Noir with 90% of the fruit coming from Bisseuil and 10% from Ambonnay. The grapes are fermented in old casks and aged on its lees for over two years. 6 g/l dosage. Fine bubbles, concentrated flavors with incredible depth and energy.
