Domaine Bony Gachot is small, family domaine in Nuits-Saint-Georges run by Fabienne Bony. In the 1960's, Jean-Pierre Bony founded the estate along with his wife, and in 2000, their daughter, Fabienne, tool control. Since she's taken over, Fabienne and her husband have increased the domaine's vineyard holdings to 6 hectares, while also negotiating contracts with growers throughout the Côtes de Nuits. In the vineyards Fabienne practices lutte raisonnée – adapting their vine treatments according to the true threat of disease, using products which respect the environment as much as possible, and only using chemical products if no other solution can be found. Traditional winemaking practices in the cellar result in wines of purity, expression and class.
Bony's Nuits-Saint-Georges Les Damodes is from a small vineyard on soils of shallow clay and limestone. The Pinot Noir comes from two parcels of vines that are between 30 and 60 years old. After at least 15 days of vatting, the wine is aged in oak barrels, 30% of which are new. The result is a well-structured wine with concentrated flavors of dark berry fruits and spice framed by firm tannins and elegant acidity. Drink now or age for another 5+ years.
