Shypoke calls the Calistoga AVA home. Their estate vineyard is located in the north-western corner of Napa Valley. The dirt to bottle history began in 1904, when Peter Heitz' great-grandparents immigrated from Alsace and literally planted roots and built bonded winery #103 for the production of fine wines. Through five generations of grape growers and winemakers, the Heitz family has continued the vision and efforts begun in 1904. Each wine honors the traditions of a family working together, to farm heirloom vines and to hand craft the resulting fruit into uniquely elegant and honest wines of place and vintage.
The heirloom Charbono grape hails from the Savoie region in France. It has been grown with great pride on the Shypoke Ranch since 1904. Shypoke's Le Corbeau pours a deep purple with a bright garnet rim. Aromas of macerated and dried red and black fruits burst from the glass accented with notes of licorice, savory spice and black tea. This Charbono is juicy and vibrant on the attack, offering an abundance of bright fruit flavors — tart cherry, blackberry, plum and pomegranate — intermingled with hints of sage, tar and bittersweet chocolate. This wine is beautifully structured, balanced wonderfully by moderate acidity and soft, pillowy tannins. The silky-smooth finish display incredible length and concentration. Surprisingly versatile on the table, you can enjoy Le Corbeau with cedar plank salmon, roasted chicken, BBQ pork or grilled flank steak.
